There are two types of cured meats – Salumi and Salami. Salumi is whole muscle cure ( like Parma, Sorano or Black Forrest Hams) These are cured in one whole piece, which takes much longer and is harder to master the balance. Salami is when the meat is chopped, much like a fresh sausage, ingredients are added and then cured in a casing.
